Ingredients - cinnamon, cloves, cardamom, mace, poppy seeds, coriander seeds, urad dal, channa dal, cumin, fenugreek, kopra, red chillies. Strong flavours.

How to use - 

Cook rice, cool and keep aside. You can use basmati or you can use left over rice. 

Heat kadai. Temper with oil, mustard seeds, urad dal, channa dal, roasted peanuts, red chillies, curry leaves and asafoetida. Add chopped egg plants and saute well. Add a pinch of turmeric powder and thick extract from a small gooseberry sized tamarind. Cook until egg plants are soft and cooked. 

Add 3 heaped tbsp of vaangi bath masala and mix well. Add a pinch of powdered jaggery and adjust salt to taste. Add cooked and cooled rice, mix well and heat for a few minutes until done

Perfect to serve for a meal or to pack for your lunch box. 

 

Store in freezer.
