Product Description: Sambar Vadagam (சாம்பார் வடகம்) is a sun-dried seasoning blend specifically crafted to enhance the flavor of South Indian sambar. It typically includes a combination of lentils (like toor dal, chana dal, and urad dal), dried red chilies, mustard seeds, fenugreek seeds, curry leaves, asafoetida, and sometimes other spices. These ingredients are coarsely ground and formed into small discs or clusters before being sun-dried under the sun, concentrating their flavors for an aromatic and convenient addition to sambar.

Shelf Life and Storage: Properly dried Sambar Vadagam has a good shelf life, generally lasting for six months to longer, if stored correctly. To maintain its flavor and prevent spoilage, it should be stored in an airtight container in a cool, dry place, away from moisture. Ensure the vadagam is completely dry before storage, especially during humid months.

Nutritional Values: Sambar Vadagam's nutritional value comes from its mix of lentils and spices. It provides some protein and fiber from the lentils and trace amounts of vitamins and minerals from the spices. However, it's used in small quantities as a flavoring agent, so its primary contribution is to the taste of the dish.

Ideas for Dishes: Sambar Vadagam is primarily used as a flavoring agent in South Indian sambar. It is typically tempered in hot oil at the beginning of the cooking process. As it fries, it releases a distinct and characteristic aroma that forms the flavor base of the sambar, often eliminating the need for separately adding ingredients like mustard seeds, fenugreek, and sometimes even onions. Some also use it in other lentil-based dishes or vegetable stews (kootu) for a similar flavor enhancement. The fried vadagam itself can sometimes be enjoyed as a very crunchy side.
