Ingredients - red chillies, coriander seeds, channa dal, tuvar dal, black pepper, cumin seeds, fenugreek seeds, rice, curry leaves. Use 3-4 tbsp for gooseberry sized tamarind. Tip : sauté the masala in oil for a few seconds for best flavour.
How to make - take tamarind extract from a lemon sized tamarind. Keep aside or add to a pot. In a kadai, add sesame oil and do tadka of mustard seeds, methi, red chillies, channa dal, toor dal, curry leaves and hing. Lower the heat. Add 4 tbsp of the podi and 1 spn of rice flour. stir together with the oil and do a quick saute in the hot oil for a minute. Take care not to burn the podi.
Add veggies or vathals of your choice. add this sauteed podi and veggies to the tamarind water. add jaggery to balance the flavours. let it boil and thicken. Once you get the desired consistency, switch off and serve with hot rice and ghee !
