Ingredients - channa dal, urad dal, red chillies, coriander seeds, black pepper, jeera, fenugreek, curry leaves. To use - 4 tbsp for a gooseberry sized tamarind. Serves 3-4.
How to use - Heat kadai. Add sesame oil Tadka - mustard seeds, urad dal, jeera, red chillies, curry leaves, hing. Add tamarind water extract and salt. A piece of jaggery. Add milagu kuzhambu podi - 4 tbsp for a gooseberry sized tamarind. If you need more thickness, you can add a little bit of rice flour along with the milagu kuzhambu podi. This is Tanjavur Iyer style podi. There could be flavour variations with other cuisines.
