Instant Paruppu adai /adai mix.
Ingredients - toor dal, channa dal, mong dal, red chillies, black pepper, jeera, curry leaves, asafoetida.
How to make vadais :
Mix the powder with very little water and salt to form a tight mixture. Let it sit for 15 minutes. Add finely chopped onions, ginger, green chillies, curry leaves, coriander and saunf to make masala vadai.
After 15 minutes, check the dough, if needed sprinkle a little more water and form tight balls with your hand. Press them lightly and drop gently into medium hot oil. If it is too hot, the inside will not cook and out side will burn. Turn gently and remove from oil when its done and drain on a paper towel.
How to make adai :
Mix the powder with water and salt to make a thick batter. Let it sit for a minimum of one hour. Add veggies of your choice. Adjust the consistency of the batter as required. Proceed to make adais.
Storage - store in freezer for long shelf life. If using soon, you can store in fridge. Use up the whole pack once you open. Will make 20-25 vadais and 5-6 adais.
