Ingredients - Dessicated coconut, Green chillies, Jeera, curry leaves 

How to use - Cut veggies into long pieces. You can use yellow pumpkin, ash gourd, snake gourd, long beans, carrots, raw plantain, raw mango and drumsticks. Avial, as the name suggests, is a medley of veggies .If you have only few of these veggies, that works too.

In a pot, add the veggies, add a little water, requisite salt and boil. Add the Instant Avial mix to this and mix well. Let it all boil together on low heat until cooked. Switch off. Add beaten sour curds. Add some raw coconut oil and tear up some raw curry leaves and add to it. Your avial is now ready! 

Some people add turmeric powder to avial. That's optional. Shallots are also added in some households. In Kerala, avial is thicker than how it's made in Tamizh Nadu. You can adjust the quantity of curd to adjust consistency. The mango gives a good sourness, so I would suggest not to skip that. 

Quantity to use - about a heaped tbsp for 1 cup of veggies. This is an approx quantity, please adjust to taste.
