Ingredients - red chillies, bay leaf, coriander seeds, cumin, shah jeera, mace, cinnamon, nutmeg, cloves, black cardamom, star anise, green cardamom, black pepper, fennel, turmeric . Strong flavours. 2-3 tsp for 1.5 cups rice. Strong flavours. Do not use too much.
To use - in pulavs / biryanis. You do not need to add any other spices with this. Do add ginger garlic paste ! You can add some whole spices too while sauteeing your onions for added flavour !
Easy pulav recipe - Wash and drain @mylaporekitchens basmati rice. Set aside for half hour. Cook, cool and set aside. Heat ghee in a kadai. Add some whole spices like cardamom, bay leafs and cloves. Saute thinly sliced onions. Add ginger garlic paste. Add vegetables ( i microwave them for faster cooking, but cooking in ghee will give you more taste ), add @mylpaore kitchens briyani / pulav masala. Add salt, cook for a few minutes until raw smell goes. Add cooked and cooled basmati rice. Mix well. Add chopped coriander and mint leaves. Garnish with cashews and raisins fried in ghee. The sweet pops of raisins here and there lend a very nice flavour.
