Ada manga, or dried mango, is made by sun-drying salted, unripe mango slices, concentrating their tartness and creating a chewy texture. It's a key ingredient in Kerala's "ada manga achar" (dried mango pickle), where it's combined with spices for a tangy, spicy, and sometimes sweet flavor. Beyond pickles, it can also add a sour, fruity note to curries and chutneys, often enjoyed as a flavorful side dish in Kerala.
Store dried ada manga in airtight containers in a cool, dry place for a long shelf life, 4 to 6 months. Ada manga pickle keeps well in sterilized glass jars in a cool, dark place.
Dried mango, being a concentrated form of fresh mango, is relatively high in calories and natural sugars, while also offering some fiber, Vitamin C, Vitamin A, and potassium.
