Yummy Vazhakkai fry - Tanjore Style - My mil's speciality and one of my husband's favourite dishes !
Ingredients

Vazhakkai - Plantain

Sambar powder

Red Chilli Powder

Besan
-
Rice flour

Turmeric Powder

Curd
-
Asafoetida

Oil for frying

Directions
- Cut vazhakkai into small cubes.
Add turmeric powder, red chilli powder, sambar powder, besan, hing and rice flour . No specific proportion. I go by eye.
- Add a few spoons of thick curd as a binder. Mix it all really well and marinate at least an hour.
- Deep fry in oil just before serving.
- To make it prettier, deep fry some curry leaves and garnish as Rani has done here. Add salt after deep frying. Otherwise it may not be even. Toss after adding salt.
Recipe Note
Note - Fry just before serving. After a while, it becomes soft. You can do the same recipe with yam too.
