Tawa pulao, a recipe that I recently tried and came out so, so good and is such a nice option for your lunch box.
Ingredients
-
@mylaporekitchens basmati rice
-
@mylaporekitchens pav bhaji masala
- Onions
- Garlic
- Ginger
- Mixed veggies - carrots, beans, cauliflower, potato, capsicum and peas. I have added one bajji molaga too. Irukkattum!
- Tomatoes.
- Coriander leaves
- Kashmiri chillies
- Jeera
- Butter
- Oil
Directions
- Cook basmati, spread on a plate and cool
- Ratio of water to rice is 2:1
- Add a bit of ghee while cooking the rice. This helps in keeping it separate.
- To a tawa, add a nice chunk of butter. Add sliced onions. Then the sliced capsicum. Add turmeric powder. Add the other veggies. Sauté until done. Add sliced tomatoes. I used 2 tomatoes for 2 cups of basmati. Saute on high heat. Keep stirring. Lower the heat when the tomatoes turn mushy.
- Pre soak the kashmiri chillies (5-6) in hot water. Grind these along with jeera, garlic cloves (4-5) and a piece of ginger.
- Add this paste to the sautéed veggies. Add @mylaporekitchens pav bhaji masala. Add salt ( enough quantity for the rice as well) Saute. Add more butter or oil as required.
- Once the base is cooked, add the cooled basmati and mix gently. Garnish with chopped coriander.
Recipe Note
Enjoy! A terrific lunch box option. We all loved it. Wanted to do a raita, but the curd hadn’t set ! Or else, would have used @mylaporekitchens raita masala for an easy, tasty raita!
