Tawa pulao, a recipe that I recently tried and came out so, so good and is such a nice option for your lunch box. 

Tawa Pulao

Ingredients

  • @mylaporekitchens basmati rice
  • @mylaporekitchens pav bhaji masala
  • Onions
  • Garlic
  • Ginger
  • Mixed veggies - carrots, beans, cauliflower, potato, capsicum and peas. I have added one bajji molaga too. Irukkattum!
  • Tomatoes.
  • Coriander leaves
  • Kashmiri chillies
  • Jeera
  • Butter
  • Oil

Directions

  1. Cook basmati, spread on a plate and cool
  2. Ratio of water to rice is 2:1
  3. Add a bit of ghee while cooking the rice. This helps in keeping it separate.
  4. To a tawa, add a nice chunk of butter. Add sliced onions. Then the sliced capsicum. Add turmeric powder. Add the other veggies. Sauté until done. Add sliced tomatoes. I used 2 tomatoes for 2 cups of basmati. Saute on high heat. Keep stirring. Lower the heat when the tomatoes turn mushy.
  5. Pre soak the kashmiri chillies (5-6) in hot water. Grind these along with jeera, garlic cloves (4-5) and a piece of ginger.
  6. Add this paste to the sautéed veggies. Add @mylaporekitchens pav bhaji masala. Add salt ( enough quantity for the rice as well) Saute. Add more butter or oil as required.
  7. Once the base is cooked, add the cooled basmati and mix gently. Garnish with chopped coriander.
