Crispy and yummy sweet potato roast
Ingredients

MK Red Chilli powder

MK Sambar powder

Mustard seeds

Urad dal

Directions
- Peel and cut sweet potatoes into medium sized cubes.
- Add oil of your choice. I prefer ground nut oil for my veggies.
Temper with mustard seeds, urad dal, jeera, curry leaves and asafoetida.
Add the washed and drained sweet potatoes to the Kadai. Mix well and cover to cook on low heat. DO NOT ADD WATER. After about 10 minutes, check if it’s done.
Once it starts softening, add salt, @mylaporekitchens red chilli powder and @mylaporekitchens sambar podi. Roast for some more time on low heat ( no need to cover now). Once roasted, switch off and serve!
Recipe Note
Heat a cast iron Kadai ( for best results).
