My friend Shobhaβs recipe !
Ingredients :
Rava 1 cup
Rice flour 1/2 cup
Maida 1/4 cup
Add salt.
Method :
Mix with water and rest for at least one hour. Add jeera, black pepper, green chillies and finely chopped ginger. Before you make the dosa, make sure pan is super hot and the batter is in a thin pouring consistency. This ensures a crisp, Lacy rava dosa. Note - no, no need to add curd, only rava idli needs curd says Shobha !

Directions
Mix the dry ingredients - rava, rice flour, maida and salt with water and rest for at least one hour.
- Add jeera, black pepper, green chillies and finely chopped ginger.
Before you make the dosa, make sure pan is super hot and the batter is in a thin pouring consistency. Pour the batter onto the hot tawa and flip when done to cook on both sides.
Tips to get a crispy dosa - runny batter or a very hot tawa.
