Directions
- Chop yellow pumpkins in to medium sized chunks.
Slice onions, garlic, green chillies and tomatoes.
Saute the sliced onions, garlic, green chillies, tomato in butter along with some garlic.
- Now add the pumpkin pieces, give a quick sauté, add water, salt, turmeric powder and pressure cook for 2-3 whistles.
- Open the cooker, let it cool. Grind it all together, strain. Boil the strained soup for a few minutes. Add black pepper powder and chopped fresh coriander.
Garnish with some cream for extra flavour and richness. Top it with some croutons for crunch.
Recipe Note
Serve hot with whatever you like. I would like some nicely toasted garlic bread slices!
You can avoid garlic if you want a garlic free version. You can avoid onion too, but flavour will be milder.
