I am not giving exact measurements and quantities here because neither me, nor Rani cook that way and we just don’t know how to do that. This is not a recipe page, and please use this as a rough guide and adjust quantities to your taste.
Directions
- Chopped ginger - sauté and set aside.
- Roast in oil - urad dal, red chillies.
- Once cool, roughly grind everything together - sautéed ginger, urad dal, red chilies - along with some tamarind, salt and jaggery.
Temper with oil, mustard seeds, urad dal, red chillies, curry leaves and asafoetida.
Recipe Note
Tastes excellent with hot plain rice or a piping hot rasam rice. Works well with dosai too. I dare say, it’ll with a lot of other things too because the ginger gives this lovely heat in your throat as you eat
