Ingredients
- 1 bunch of fresh pudina leaves

2 tbsp urad dal

2 tbsp channa dal

5-6 red chillies (adjust to taste)

A small piece of tamarind

A small piece of jaggery

Salt, to taste

Oil, mustard seeds, curry leaves, and asafoetida (optional, for tempering)
Directions
- 1. *Prepare Pudina*: Pick, clean, wash, and sauté pudina leaves. Set aside.
- 2. *Roast Ingredients*: Roast urad dal, channa dal, and red chillies in oil until golden brown.
3. *Grind*: Add roasted ingredients, pudinatamarind, jaggery, and salt to a mixer. Grind to a coarse, thick mixture (no water needed). Once all the above are ground, add pudina and pulse it.
- 4. *Temper (optional)*: Heat oil, add mustard seeds, curry leaves, and asafoetida. Pour over thogayal.
- 5. *Serve*: Enjoy with hot rice!

Adjust spice level to taste
Add coconut if desired
