Directions
- Heat Kadai. Add oil ( I usually use wood pressed peanut oil for veggies).
Temper with mustard seeds, urad dal, jeera, curry leaves, red chillies, hing. Add sliced onions, ginger, green chillies. Sauté.
- Add potatoes. Do not add water. Keep flame low. Mix everything. Cover and cook until potatoes are almost done.
Open the lid, add spice powders - Rani used Mylapore Kitchens Kashmiri red chilli powder, regular red chilli powder, turmeric powder, peri peri seasoning and some garam masala. Add salt. Cover and cook until done.
Recipe Note
I recommend an iron Kadai to get this right. Cut potato into wedges. Chop onion, ginger, green chillies into long, thin slices. Can add a couple of crushed garlic if you like.
Serve hot. We paired this with dal kichdi for lunch. You can avoid peri peri and garam if you doing the South Indian version. Use sambar podi / curry podi instead.
