Directions
- Pressure cook potatoes with turmeric powder. Peel, mash and set aside. Heat a kadai, Add oil,temper with mustard seeds, urad dal, jeera, lots of green chillies and ginger.
Add finely chopped onions. Saute. Don’t over cook the onions. A slight bite is good.
- Add mashed potato. (Here, you can also add other veggies like pressure cooked carrot, beet and peas if you are doing a veggie bonda), add salt and mix well.
Add lots of fresh chopped coriander. Add a squeeze of lime (this is what elevates the whole thing).Your potato filling is now ready. Make small balls and keep aside.
- Now mix the batter with @mylaporekitchens bajji bonda mix (nothing artificial added, no soda bi carb added) and proceed to make the bondas.
Dip the balls into the batter and deep fry in medium hot oil. Do not add too many at a time.
Recipe Note
A couple of tips to get a crispy skin - add a couple of spoons of hot oil to the batter or add a spoon of ghee. Or try using cold soda (the drinking one) to make the batter instead of water.
