A mildly flavoured coconut milk based curry made
with yellow pumpkin, ash gourd & black eyed peas.
Ingredients

Yellow pumpkin
-
Ash gourd
-
Black eyed Peas
-
Green Chillies
-
Ginger
-
Coconut Oil
-
Curry leaves
-
Salt

Coconut milk
Directions
Slice ash gourd and yellow pumpkin.
- Julienne green chillies and ginger.
- Pre soak and pressure cook black eyed peas (1-2 whistles).
- Extract coconut milk - thick and thin.
Add pumpkin and ash gourd to a pot. Add ginger and green chillies. Add pressure cooked black eyed peas. Add salt.
Add the light coconut milk ( second press) and cook. Add thick coconut milk ( first press) and boil for a minute. Not longer than that. Make sure it does not become too watery.
Add a dash of raw coconut oil and some curry leaves ( raw).
Recipe Note
Mostly raw coconut oil is used in oil. Not
heated.
Serve with hot rice, sambar and Pappadam
