Veggies of choice - what we have here is with Potatoes, bush beans and whole green moong.

You can add onions, green chillies to this if you like.

Mustard seeds

Urad dal

Jeera

MK Red chilli powder

MK Turmeric powder

Directions
- Cube potatoes. Cut beans into long pieces. Soak some green moong.
- Heat Kadai. Add oil. I usually use groundnut oil. Temper with mustard seeds, urad dal, jeera, curry leaves, hing. Throw in a couple of red chillies if you want.
- Now cover and cook. Add salt. This won’t need water. We usually use an iron Kadai and cook on low flame.
- When half done, add spice powders. We usually use turmeric powder, red chilli powder, sambar powder from @mylaporekitchens. You can use other podis like mangalore masala etc for a diff flavour. Doesn’t matter.
- Once you add the spice powders, you can open and slow roast. The green moong will have a bite to it. If you don’t want that you can pressure cook it 1 whistle. But this was tasty.
- To this, you can add other veggies too. Like onion, capsicum etc.

Recipe Note
For this you can try different veggies. Vazhakkai, yam, potato, brinjal, a mix of these, even carrots and beets. Onion also can be added, along with a couple of slit green chillies.
