Milagu kuzhambu podi - An option instead of roasting and grinding
Directions
Soak 7-8 mango vathals in hot water. This is your tamarind substitute.
- Roast in oil - 1 tbspn each of urad dal, channa dal, corainder seeds, 8-9 red chillies, 1/2 tsp of black pepper and 1/2 tsp of jeera. Some curry leaves as well.
- Grind all the above ingredients together.
- Add salt (vathal will have salt, so taste and add) and jaggery. add water. Boil until it cooks and thickens.
Temper with sesame oil, mustard seeds, red chillies, curry leaves, hing.
Alternatively, you can avoid roasting and grinding and use @mylaporekitchens milagu kuzhambu podi. The flavours are similar.
Recipe Note
Serve with hot rice, ghee and some yummy Mylapore Kitchen karuvadams.
