Ingredients

Mixed Dals

Instant Kichdi Mix from MK

For tempering - jeera, curry leaves, dry red chillies, asafoetida.
Directions
Wash and soak basmati rice for half hour.
Soak mixed dals for half hour - I used yellow moong dal, green whole Moong, masoor dal. No specific proportion. Just a bit of this and a bit of that.
Heat pan. Add ghee . Tadka - jeera, curry leaves, red chillies, hing. Sometimes I throw in a bit of saunf as well.
- Add some whole spices like star anise, cinnamon, elaichi and cloves.
- Add chopped onions, ginger garlic paste. Add tomatoes. Sauté it all.
- Add turneric powder, red chilli powder, garam masala.
- Add drained dal and rice. Add enough water.
- Add salt. I don’t do my measurements much. Just go eye. Pressure cook 5-6 whistles.
- Open. Adjust consistency. Add ghee.
Garnish with fresh chopped corainder
Serve piping hot kichdi with fried black pepper papad and a spicy avakkai pickle !
Recipe Note
Kichdi can be made satvik too by avoiding onions and garlic. Can do vegan version by using cocnut oil instead of ghee. Pairs great with a spicy potato kari.

Made this palak kichdi recently for dinner, with @mylaporekitchens Instant kichdi mix. Of course, I added onions etc in it for more flavour. But this instant mix cuts down cooking time so much and the end result is simply fab! It is definitely a favourite for me.
