Easy and nutritious recipe that can be made with any variety of greens. I learnt this from my mom's helper, Selvi, who is a wonderful cook.
Ingredients

1 bunch of any greens - finely chopped and washed. here Naadan keera from Kerala is used, it is a variety with big stems and big leafs. You can use any greens.

Onions - 2 medium sized - finely chopped

Green chillies - 2 or to taste - finely chopped

Coconut oil

Mustard seeds
-
Urad dal
-
Jeera
-
Red chillies
-
Salt to taste

Grated coconut - about ½ cup for garnish.
Directions
Heat kadai. Add coconut oil. Temper with mustard seeds, urad dal, jeera, red chillies.
Add finely chopped onions and green chillies. Saute.
Add finely chopped Keerai, add salt and sauté until it’s cooked. You don’t need water. The washed moisture on the leaves is enough to cook it.
Once done, garnish with grated coconut. And done!
Tastes great with just plain rice or serve with sambar, rasam, the works!
Recipe Note
Any type of green can be used in this recipe. Can be made without onions too. You can also add garlic additionally, if you like the flavour. If you are adding, add it along with the onions and saute. Another option is to soak some moong gal and add it along with the greens. Added protein and it will add some texture to the dish.
