This is Rani's version of the podi potta kari.
Ingredients

Green Brinjals (small) or Purple Brinjals (small)

MK Curry podi - 1 tbsp or adjust to taste

Turmeric powder

Channa Dal 2 tbsp

Urad Dal 2 tbsp

Red Chillies 8-10 or adjust to taste

Coriander seeds - 1 tbsp

Oil of your choice - I prefer ground nut oil

Asafoetida

Tamarind - small gooseberry sized

Salt

Optional flavouring for extra spice - MK Andhar Nalla Kaaram Podi
Directions
- Roast channa dal, coriander seeds, red chillies. Grind coarsely with hing and tamarind.
Heat Kadai. Temper with peanut oil, mustard seeds, urad dal, jeera, curry leaves and asafoetida.
- Add chopped green brinjals. Add turmeric powder and salt. Cover and cook until done.
Add the coarsely ground podi and a bit of curry podi roast on low flame for a few minutes. Serve hot.
If you like it really spicy, try adding a spoon of our Andhra Nalla Karam podi !
Recipe Note
Tip - Roasts well in cast iron or iron kadais. Serve with hot rice and rasam, sambar and some papad ! This kari goes really well with just some hot rice and a spoon of ghee too ! You don't really need a gravy.
