A delicious and healthy kuzhambu using fresh Manathakkali
Ingredients

1 small lemon-sized tamarind ball
-
4 tbsp vatha Kuzhambu podi (or puli/masala Kaara Kuzhambu podi)

1.5 tbsp rice flour

Small onions & garlic (optional)

Fresh manathakkali
-
Sesame oil
-
Mustard seeds, chana dal, toor dal (1 tsp each)

Red chillies, curry leaves, asafoetida, methi (1/4 tsp), jaggery, salt
Directions
Tamarind extract: Boil tamarind + salt, extract juice.
Tadka: Heat sesame oil → add mustard, chana dal, toor dal, red chillies, methi, curry leaves.
↓ heat. Add hing, onions, garlic. Saute.
Add 4 tbsp podi + 1-1.5 tbsp rice flour. Saute (low heat).
Add tamarind water, salt, jaggery. Boil till thickens.
Saute manathakkali in oil. Add to kuzhambu. Boil 2 mins. Done!
