Directions
Pre soak basmati rice for half hour.
Chop veggies into desired shape , size
Heat kadai, add ghee ( I prefer using ghee or butter for this as it gives a much better flavour) .
Temper with some whole jeera. I usually don’t add other whole spices to this.
Add chopped onions, green chillies, garlic and sauté until golden brown.
Add chopped tomatoes and sauté.
Add chopped veggies and sauté. Cover and cook if needed. Do not add water. Iron kadai works best.
Add spice powders - turmeric powder, red chilli powder, pav bhaji masala and instant red gravy mix ( a client suggested this and it works amazingly well for this rice and biryanis without much effort)
I prefer to cook the rice in rice cooker. 1:2 ratio. Cook and cool the rice.
Add cooled and separated rice. Add chopped pudina and coriander.
Optional garnish - cashews and raisins sautéed in ghee.
Pair it with a raita ( easy flavour addition with @mylaporekitchens raita masala) and a tasty, wholesome meal is ready.

💡 Pro-Tips for the Perfect Texture
Use Cold Rice: Always use leftover, chilled, or completely cooled cooked rice. Warm rice will break down and turn mushy when tossed on the high-heat skillet.
The Rice Secret: When boiling your Basmati rice initially, cook it to about 90% (al dente) and add a few drops of oil to the water to keep the grains separate.

The Masala Magic: For that signature, authentic Mumbai roadside taste, do not skimp on the Pav Bhaji masala or the butter.
Smoky Twist: If you do not have a large iron griddle (tawa), use a heavy-bottomed cast-iron skillet to achieve that classic smoky, street-style char.
