A quick, tangy thogayal with brinjals/kathirikkai, perfect with hot rice for a tasty meal !
Ingredients

Brinjal - 1 Big

Urad dal
-
Channa Dal
-
Red Chillies
-
Tamarind
-
Jaggery - adjust to taste - small medium piece should be ok

Salt - to taste

Neutral oil for roasting and sesame oil for tempering
Directions
- Apply oil and roast a big baingan.
- Roast on open flame.
- Wash under running water and peel.
Roast and grind - red chillies, urad dal, channa dal. Do not add water. Grind to a coarse powder.
Add tamarind, jaggery, salt and grind.
- Add ground mixture to the mashed baingan pulp.
Temper with sesame / gingelley oil, mustard seeds, urad dal, red chillies, curry leaves and asafoetida.
