This is similar to Vazhaikkai muru and Cheppankizhangu fry and all of these are Tanjavur specialities and are my mil's recipes.

Brinjal fry is a yummy way to make even those who don't like brinjal to eat this vegetable !
Ingredients

Small brinjals
-
MK Red Chilli Powder
-
MK Sambar Powder
-
MK Rice Flour
-
MK Besan
-
Asafoetida
-
Thick curd - 2-3 tbsp

Oil to fry

Salt
Directions
Wash, drain and slice brinjals
Add all of the above powders except salt. No specific ratio, go by eye, to taste. Mix well.
Add curd and mix again. This will help bind the spice powders
Cover and let this marinate for at least an hour.
Heat oil and deep fry, Separate them with your hands if they are too lumpy.
After frying, drain on a kitchen towel and add to a bowl. Once all done, add salt to taste and toss well to mix
Serve immediately. This will not remain crisp after a while
Note - fry just before serving !

The same method can be used for veggies like yam, plantains etc. too.
