Simple, healthy, tasty beets and onion subzi for rotis
Ingredients

Beetroots - grated

Onions - thinly sliced

Tomatoes - sliced thin

Green Chillies - sliced thin

Ginger - julienned

Coriander - chopped fine

Directions
- Grate beetroot ( big size grater). Slice onions, tomatoes, ginger and green chillies fine.
Heat Kadai. Add oil. Add jeera, curry leaves, asafoetida. Saute onions, green chillies, ginger, tomatoes.
- Add grated beetroot. No water. Add salt. Cover and cook on slow heat.
- Once done, garnish with freshly chopped coriander.
- Add a dash of lime for an extra kick.
Recipe Note
Serve with hot rotis / phulkas / pooris. Delish. Or make wraps. Whatever. Low fat and super healthy. No masalas in this. Ginger and green chillies lend the flavour.
