Basic Molakoottal - you can use any veggie, the method is the same
Ingredients

Ash gourd / Pumpkin / chow chow / carrot / mixed veggie

Grated coconut - ½ cup or little less

Toor Dal - about ¾ cup

Jaggery - a small piece
-
Jeera
-
Red chillies
-
Coconut oil
-
Mustard seeds

Urad dal

Curry leaves

Directions
- Many veggies can be used for molakoottal - Ash gourd, pumpkin, chow chow, koorkkai, carrots, mixed veggies, snake gourd etc.
- Chop veggies into big chunks and cook with turmeric powder.
- Grind into a smooth paste - coconut (3-4 tbsp), jeera and 1 red chilli.
- Add to cooked veggies. Add salt. A bit of jaggery. Let it all boil together for a few minutes. Add pressure cooked toor dal. About 1/2 cup of uncooked toor to serve 4 people.
Temper with coconut oil, mustard seeds, urad dal, jeera, curry leaves, red chillies, asafoetida .

Molakoottal should not be thick like koottu. Adjust consistency by adding water. Adding too much coconut will also make it too thick. Best paired with a thogayal of your choice. Mango thogayal would be my pick !
