Podi Arisi Kanji - Kerala Style ( broken rice gruel )

Rice kanji is a healthy, filling option for an easy meal. It aids digestion, boosts energy and keeps you hydrated.
Ingredients

Broken matta rice ½ cup

Salt to taste

Water to cook
Directions
Wash broken matta rice 3 times.
Boil water in a large pan.
Once it starts to boil, add the washed rice and cook. Add little bit of salt.
There is no specific ratio. This has to be watery. It will further thicken on cooling.
You can also pressure cook this with at least 1 rice : 5 cups water and 1-2 whistles, but rice can get over cooked in the pressure cooker. You can adjust the consistency by adding more hot water.
Best served with cheru payar thoran (recipe given separately), chutta pappadom, thenga thogayal and salted kaandhari. In English, that would be, best paired with fire roasted papads, coconut thogayal (thogayal is much thicker than a chutney, so not using the term chutney here), whole green moong stir fry with coconut and a birds eye chillies in brine !

Matta rice is a pinkish large grained Kerala rice variety. You will get broken matta in most grocery stores.
Kanji
Ideally, in Kerala, Kanji would be paired with a veggie or 2,a thogayal, a pickle and pappadom.
One of my late dad's helpers introduced me to this. My Amma loves kanjiyum payarum, and Babitha, the help would often make it for her. Babitha also taught me how to make this cheru payar thoran.
